The natural cognac cocktail: Pineau

Pineau, made of fresh grape juice and cognac with an alcohol percentage of 60%, is the most traditional drink from the Cognac region. The pineau (white or rose) from the Charente is subject to very strict regulations: it can only be made from grape species that grow in the region and the juice must be extracted within 24 hours after the grapes have been picked. In addition to this is must ripen anywhere between 18 months and 3 years in old oak wood barrels.

Just like in a cocktail, the basic ingredients of the pineau are hardly divisible, but mould into a delicious whole.

Pineau contains 16 to 22% alcohol and should be served chilled, preferably without ice. The many small producers in France make many variants.

Because Pineau is very aromatic and rather sweet it is not commonly used in cocktails. In spite of that Pineau makes a very refreshing long drink when mixed with some fruit juice or tonic.

Arago

Short drink: Digestif.

Add to a shaker that is 50% filled with ice:

4/10 Cognac
3/10 Crème de banane
3/10 Cream

Shake well and serve in cocktail glasses.

Prince Charles

This short drink, which is primarily thought of as and digestif, can also be a reviver during the day.

Add to a shaker that is 50% filled with ice:

4/10 Cognac
3/10 Drambuie
2/10 Lemon Juice

Shake and pour into small tumbler glasses. Decorate with a slice of lemon.

 

Kriss

Although this long drink is quite refreshing, it's also quite strong.

Put in a mixing glass with some ice:

5/10 Cognac
2/10 White Vermouth
2/10 Amaretto
1/10 Lemon Juice
1 splash of Sugar cane syrup

Shake well and serve in large tumbler glasses. Top off with tonic and decorate with a slice of lemon.

Stinger

This relatively soft cocktail is best enjoyed as and digestif. If you use the green crème de menthe, you will make an Emerald cocktail.

Add to a shaker that is 50% filled with ice:

7/10 Cognac
3/10 White Crème de Menthe
1/10 raspberry syrup
1 splash angostura

Shake well and serve in cocktails glasses.

Passaat

Short drink: Digestif.

Add to a shaker that is 50% filled with ice:

5/10 Cognac
2/10 Mandarin Liqueur
2/10 Passion fruit Juice
1/10 Lemon Juice

Shake well and serve in chilled cocktail glasses.

Menthe Frappée

short drink: Aperitif.

Put in a mixing glass with some ice:

5/10 Cognac
5/10 Green Crème de Menthe

Stir and transfer to tumbler glasses with crushed ice. Add some thin sliced mint leaves and decorate with a few mint leaves.

 

Brandy Sour

Preferably serve before dinner, because this combination of cognac and lemon makes one delicious aperitif.

Add to a shaker that is 50% filled with ice:

7/10 Cognac
3/10 Lemon Juice
1 splash of sugar cane syrup

Shake long and serve in small tumbler glasses. Decorate with a slice of lemon.

Harvard

Short drink: Digestive.

Put in a mixing glass with some ice:

5/10 Cognac
5/10 Red Vermouth
1 splash of Angostura

Shake well and serve in chilled cocktail glasses. Decorate with a preserved cherry.
